Candied Sweet Potatoes (Yams) w/ Marshmallows

The BEST sweet potatoes ever!!!!

First off, I have never made this before Thanksgiving. Also I had never had it until the beginning of this year at a Ski Trip with WSU. I've had different versions of it and I really like this recipe. In fact, my boyfriend loves it! It has a hint of cinnamon and nutmeg. It's not too sweet but just right. I've had some candied sweet potatoes that were cubed, sliced, and mashed. This one is mashed with some chunks of it. I liked the mix of it being mashed and having some of the chunks.
Here's a secret: John said it was better than his mom's!

This calls for a 9" x 13" pan. About 12 servings. 

Ingredients:
4-5 pounds of sweet potatoes, quartered. 
1 1/4 cups of margarine or butter. 
1 1/4 cups of brown sugar
3 cups of miniature marshmallows, divided
ground cinnamon to taste
ground nutmeg to taste

Directions:
1. Preheat oven to 400 degrees F. Grease a 9x13 inch baking dish.
2. Bring a large pot of water to a boil. Add potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel. 
3. In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups of marshmallows, cinnamon and nutmeg. Cook, stirring occasionally, until marshmallows are melted. 
4. Stir potatoes into marshmallow sauce. While stirring, mash about half of the potatoes, and break the other into bite-sized chunks. Transfer to prepared dish. 
5. Bake in preheated oven for 15 minutes. Remove from oven and cover top evenly with remaining marshmallows. Return to oven and bake until marshmallows are golden brown.
